a jar of biscotti


1 1/4 cups sugar

3 eggs

1/4 tsp salt

1/4 tsp baking powder

2 cups plain flour

1 cup nuts – almonds, hazelnuts or both


Preheat oven to 150 deg.  Line tray with baking parchment.  Whisk sugar and eggs till thick.  Fold in the flour, baking powder and salt, then add the nuts.  The mixture will be very soft but not sloppy, add a little more flour if it is too soft. Spoon on to the baking tray into a long oval shape and bake for 1 hour. Remove from the oven and turn the oven down to 140 deg.  Allow to cool for 10 minutes then cut into roughly 1/2″ slices, return to tray, cut sides up.  Toast in oven for 10 mins each side.  Cool and store in airtight tin.  Serve with good coffee, beats Starbucks any day!
