These bring back memories of living in Pembrokeshire, where I learnt this recipe was perfect for greeting my children coming home from school, far too hungry to wait until the next meal!
Ingredients
225g/8oz plain flour
85g/3oz caster sugar plus extra for sprinkling
1 tsp mixed spice
1 tsp baking powder
100g/4 oz butter cut into small piecs
50g/2 oz dried fruit, (currants are the most authentic I think, but I use whatever I’ve got)
1 egg, beaten
splash of milk
Method:
Put the flour, sugar, mixed spice, baking powder, and a pinch of salt into a bowl. With your finger, rub in the butter until it resembles fine breadcrumbs. Mix in the dried fruit. Work the egg into the mixture to a soft dough, adding a splash of milk if it’s a bit dry.
Roll out the dough on a lightly floured surface to around 1cm thickness and cut into rounds, I used a 6cm cutter. Lightly grease a heavy frying pan or griddle and place over a medium heat.
Cook in batches for about 3 mins a side until they are golden brown and cooked through. Sprinkle with sugar.
Make a pot of tea, sit down and enjoy. (If you are feeling really naughty, they are even more delicious spread with bit of butter!)
